One of our family’s favorite breakfasts. The key to a great Akuri Mumbai style is to brown the onion along with the turmeric and scrambling the eggs just so that they are done but still moist.
(serves 2)
Ingredients:
- 1/2 tbsp ghee
- 4 eggs, beaten
- 1/4 tsp turmeric powder
- 1 small onion, finely chopped
- 1 small tomato, finely chopped
- 1 green chilli, finely chopped
- 1 tsp minced ginger
- 1/2 tsp salt
- 1 tbsp chopped coriander leaves
Preparation:
- Heat the ghee in a frying pan
- Add the chopped onion and turmeric powder and brown on medium heat for 3 minutes
- Add the ginger and green chilli and continue to fry for 2 minutes
- Add the tomato and salt and fry for 3 minutes
- Add the beaten eggs and continuously stir the mixture while the eggs are being cooked
- Add the chopped coriander leaves and stir into the egg mixture
- The Akuri is done when the eggs are cooked but still moist
