Akuri (Spicy Indian Scrambled Eggs)

One of our family’s favorite breakfasts. The key to a great Akuri Mumbai style is to brown the onion along with the turmeric and scrambling the eggs just so that they are done but still moist.

(serves 2)

Ingredients:

  • 1/2 tbsp ghee
  • 4 eggs, beaten
  • 1/4 tsp turmeric powder
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 1 green chilli, finely chopped
  • 1 tsp minced ginger
  • 1/2 tsp salt
  • 1 tbsp chopped coriander leaves

Preparation:

  • Heat the ghee in a frying pan
  • Add the chopped onion and turmeric powder and brown on medium heat for 3 minutes
  • Add the ginger and green chilli and continue to fry for 2 minutes
  • Add the tomato and salt and fry for 3 minutes
  • Add the beaten eggs and continuously stir the mixture while the eggs are being cooked
  • Add the chopped coriander leaves and stir into the egg mixture
  • The Akuri is done when the eggs are cooked but still moist
