A healthy ice cream, how about that?! And it is delicious too. You should see my son eating this. If he had the chance he would lick the bowl clean. I guess he does when I am not looking… There is no dairy involved, no sugar, just a few healthy ingredients and a blender. Give it a go and be prepared to never look back..
Serves 2
Ingredients:
- 2 bananas, cut into slices and frozen (it will be easier if you freeze the slices in one layer. Some people like to freeze them on a tray, I put them in a zip-lock bag. spread them out and lay it down flat in the freezer)
- 1 tbsp coconut cream (chill a can of coconut milk in the refrigerator so that the liquid separates from the cream)
- 1 tbsp almond butter *
- 1 heaped tbsp unsweetened cacao powder
- Some chopped nuts to serve (optional)
Preparation:
- Place all the ingredients in a high powered blender (or food processor) and blend until smooth
- Divide over two bowls and enjoy!
* To make your own almond butter:
Heat the oven to 175 degrees Celsius. Spread out 1 cup of raw almonds on a baking sheet and place in the oven. Roast for about 10 minutes. Remove from the oven and allow to cool completely. Place the roasted almonds in a food processor with a pinch of salt and process until you have smooth and creamy almond butter.
