It is so much easier than you think: making mayonnaise at home. It tastes a million times better than store-bought mayo and has only 5 wholesome ingredients, unlike most of the ones you find on the shelves. Here is the recipe I use. It is from Melissa’s Joulwan’s book “Well Fed”.
Ingredients:
- 1 large egg
- 2 tbsp lemon juice
- 1/2 tsp salt
- 1/2 tsp mustard powder
- 1 + 1/4 cup light tasting olive oil (for mayo you do not want cold pressed extra virgin oil)
Preparation:
- Crack the egg into a blender and pour in the lemon juice
- Allow to come to room temperature (which is important). This takes anywhere between 30 to 60 minutes
- Add the salt, mustard powder and 1/4 cup of olive oil and blend together on medium speed for about 20 seconds
- Continue to run the blender at medium speed and begin to slowly pour (more like a light drizzle) the remaining 1 cup of olive oil.
- Take your time and don’t get impatient. The pouring process will take a good few minutes and is essential for making a thick and creamy mayo. Relax, breathe and enjoy: you are making mayo!
Enjoy and use in sandwiches, wraps, salad dressings.
