A refreshing, crunchy, sweet & sour beet salad spiced up with some green chili and roasted cumin powder. Delicious on its own or as a side salad.
Ingredients:
- 1 medium size beet, peeled and julienned (about 1 cup)
- 1 small red onion, thinly sliced (about ¼ cup loosely packed)
- 1 heaped tbsp. finely chopped fresh coriander
- 1 small green chili, finely chopped (about 1 tsp)
- 1 tbsp lemon juice
- 1/8 tsp salt (or to taste)
- ¼ tsp roasted cumin powder
- handful of roasted cashew nuts, roughly chopped
Preparation:
- Toss all the ingredients together in a bowl and allow to chill in the refrigerator for at least 1 hour.
