A flavorful and satisfying breakfast. A perfect way to get your greens in, your protein and so much more goodness at the start of the day. Eggs are a high quality source of protein and good fats, the important B-vitamins and many other minerals and with a high amount of choline (which is linked to the production of our “happiness” hormones), you will be set for a wonderful day.
Ingredients
(serves 2)
- 2 cups chopped spinach
- 2/3 cup chopped button mushrooms
- 1 clove garlic
- 2 large eggs
- 2 tbsp soft goat cheese
- salt & pepper
- ghee
Preparation
- Preheat the oven to 200 degrees Celsius
- Grease 2 small ramekins with a little ghee
- Heat 1 tsp of ghee in a frying pan and sautee the minced garlic for about 30 seconds
- Add the mushrooms and continue to stir fry for 3 – 4 minutes or until soft
- Add the spinach and stir until wilted
- Season with salt and pepper
- Spoon the spinach / mushroom mixture into the ramekins
- Crack one egg at the time into a small bowl and gently slide it into the ramekin, making sure to keep the yolk intact and in the center
- Place pieces of the goat cheese on top of the egg whites
- Sprinkle with some freshly ground black pepper
- Bake in the oven for 10-12 minutes or until the egg whites are set and the yolk is cooked to your desired consistency
