Thai Flavored Cashew Nuts

A mini explosion of Thai flavors in your mouth. Delicious and mildly addictive… I warned you!

Ingredients:

  • 500 g raw cashew nuts
  • 2 tbsp coconut oil
  • 1 tbsp maple syrup
  • 1 tbsp jaggery (or palm sugar)
  • 2 tbsp lime juice
  • 2 tsp lime zest
  • 2 tbsp fish sauce
  • 1/2 tsp salt
  • 2 minced thai red chillies
  • 3 minced garlic cloves
  • 4 kafir lime leaves, center ribs removed
  • 2 tsp thai red curry powder (I used this but you could try using Thai Red Curry paste instead)

Preparation:

  • Combine all the ingredients in a small food processor
  • Blend until smooth
  • Put the cashew nuts in a bowl and toss in the mixture
  • Roast in the oven on a baking sheet at 150 degrees Celsius for about 40 minutes or until nicely roasted, tossing every 10 – 15 minutes
  • Allow to cool and store in an airtight container
