A mini explosion of Thai flavors in your mouth. Delicious and mildly addictive… I warned you!
Ingredients:
- 500 g raw cashew nuts
- 2 tbsp coconut oil
- 1 tbsp maple syrup
- 1 tbsp jaggery (or palm sugar)
- 2 tbsp lime juice
- 2 tsp lime zest
- 2 tbsp fish sauce
- 1/2 tsp salt
- 2 minced thai red chillies
- 3 minced garlic cloves
- 4 kafir lime leaves, center ribs removed
- 2 tsp thai red curry powder (I used this but you could try using Thai Red Curry paste instead)
Preparation:
- Combine all the ingredients in a small food processor
- Blend until smooth
- Put the cashew nuts in a bowl and toss in the mixture
- Roast in the oven on a baking sheet at 150 degrees Celsius for about 40 minutes or until nicely roasted, tossing every 10 – 15 minutes
- Allow to cool and store in an airtight container
