Salty and sweet with a delicious mix of flavors, these nuts are easy to prepare and perfect to keep handy for a quick snack. Take some with you when you are travelling or use them for gifts.
Ingredients:
- 2 cups of mixed nuts (cashews, almonds, walnuts, pecans)
- 2 tsp. ghee
- 2 tsp. maple syrup
- 2 tbsp. orange juice
- 2 tsp. jaggery (or unrefined cane sugar)
- 2 tsp. orange zest
- 2 tsp. grated ginger
- ½ tsp. ginger powder
- ½ tsp. coriander powder
- ½ tsp. cumin powder
- 3/4 tsp. salt
- Pinch of cayenne pepper
Method:
Preheat the oven to 300 degrees Fahrenheit (150 Celcius)
In a small sauce pan combine all the ingredients except the nuts. Gently heat the mixture until the ghee has melted and you are able to mix everything together. Toss in the nuts and stir to coat them with the mixture.
Spread out the nuts in a single layer on a baking sheet and place in the oven. Roast for 20 minutes, tossing the nuts once after 10 minutes. After 20 minutes, check and if they don’t seem toasty enough, toss again and keep inthe oven for another 5 to 10 minutes.
Remove from the oven and let it cool completely.
