A refreshing and flavourful salad that is so easy to make and so delicious.
Ingredients:
Dressing:
- 3 tbsp lemon juice
- 2 tbsp finely chopped red onion
- 1 1/2 tsp coconut sugar
- 3 tsp Thai fish sauce
- 2 garlic cloves, minced
- 1/2 – 1 finely chopped red chili (some like it hot!)
- 2 tbsp chopped spring onion
- 2 tbsp chopped fresh coriander leaves
Salad:
- 2 cups pomelo flesh, broken up into bite-size pieces
- 300 g medium size prawns
- 1/2 cup roasted cashews, roughly chopped
Preparation:
- Place the dressing ingredients in a small bowl and whisk together
- Heat a frying pan without oil and when hot, toss in the prawns and stir fry until cooked through (no oil used)
- Remove from the pan and allow to cool
- Place the pomelo in a large bowl and pour over the dressing
- Add the prawns and stir to combine
- Cover and allow to marinate in the fridge for a few hours
- Before serving, top with the chopped cashews and some more chopped spring onion and coriander
