A fruity, mint-infused iced tea. Deliciously refreshing and perfect for a hot summer afternoon.
To prepare the mint tea:
Ingredients:
- 1 cup of fresh mint leaves (loosely packed)
- 2 tbsp. white tea leaves
- 1 liter water
- 2 tsp honey (or to taste)
Preparation:
- In a pot, bring the water to boil.
- Add the mint leaves and allow to simmer for a few minutes.
- Turn of the heat and add the tea leaves
- Cover and let the contents steep for 5 minutes.
- Strain through a sieve into a glass jar and stir in honey.
- Let the tea cool down and refrigerate until ready to serve.
To prepare the Iced Mango Mint Tea:
Ingredients:
- flesh of 1 mango, pureed
- 1 liter of cold mint tea
- 1 tbsp lemon juice
Preparation:
- Put all the ingredients in a high speed blender
- Blend until smooth
- Pour into glasses over ice and garnish with a lemon wedge and some mint leaves
