Chickpeas are an excellent source of fiber and protein and when mixed with plenty of healthy vegetables, dressing and some feta cheese it makes a complete and tasty meal for lunch, a light dinner or even as a side salad.
(serves 1)
Ingredients:
- ½ cup diced zucchini
- ½ cup diced yellow squash
- ½ cup diced yellow or red capsicum
- ½ cup halved cherry tomatoes
- 2/3 cup cooked or canned chickpeas (when using canned, run some hot water over the drained chickpeas to “revive” the taste)
- 8 halved black olives
- 2 tbsp chopped parsley
- ¼ cup crumbled feta cheese
Dressing:
- 1 tbsp extra virgin olive oil
- 1 tsp lemon juice
- 1/8 tsp sea salt
- black pepper to taste
Preparation:
- Place the diced zucchini and squash in a small saucepan with a few tablespoons of water and bring to a boil
- Cover and let it steam for a few minutes
- Drain the excess water and place in a salad bowl along with all the other ingredients
- Pour over the dressing and toss everything together
- Serve at room temperature
