A Most Amazing Loaf of Bread

Also known as: The Life Changing Loaf of Bread.

This is not my recipe. It was first posted on the web by Sarah Britton of My New Roots, a very inspiring and beautiful food blog I love. It has pretty much gone viral since she posted it for the following reasons: it is delicious, super nutritious, made with pure and whole ingredients, gluten-free, sugar-free, and yeast-free. Although not a traditional bread the way we know it, it makes an excellent alternative and it supports your digestion with healthy fibers, healthy fats, psyllium husk and nuts and seeds that have been activated. Too good not to share. So here it goes:

Ingredients:

  •  1 cup sunflower seeds
  • ½ cup flax seeds
  • ½ cup hazelnuts or almonds
  • 1 ½ cups rolled oats (choose certified gluten-free if gluten is a problem for you)
  • 2 tbsp chia seeds
  • 4 tbsp psyllium seed husks
  • 1 tsp sea salt
  • 1 tbsp maple syrup
  • 3 tbsp coconut oil (melted)
  • 1 ½ cups water

Preparation:

  • Preheat the oven to 175 degrees Celsius (350 Fahrenheit)
  • In a flexible, silicon loaf pan combine all dry ingredients and stir well
  • In a separate bowl, combine the maple syrup, coconut oil and water and whisk together
  • Pour into the loaf pan and mix into the dry ingredients until everything has been soaked through properly
  • Smooth out the mixture and let it sit on the kitchen counter for anywhere between 2 to 6 hours. I prefer 6; the longer the nuts and seeds soak the better I think.
  • Place the loaf pan in the center of the oven and bake for 20 minutes.
  • Remove the bread from the loaf pan and place directly upside down on the oven rack
  • Continue to bake for another 30 – 40 minutes.
  • Allow to cool completely before slicing.

Delicious on its own, with some butter and honey, my apple & prune sauce (recipe in my upcoming e-booklet), with a slice of goat cheese, with a bowl of soup etc. etc. Slice and freeze to enjoy over a longer period of time and pop it in a toaster before eating.
