A lovely light and crunchy chopped salad perfect for lunch or dinner. It’s the dressing that you’ll fall in love with..
Ingredients:
- Romaine Lettuce – chopped
- Carrot – julienned
- Celery – cut into thin slices
- Spring onion – finely chopped
- Cilantro – roughly chopped
- Toasted sesame seeds
- Roasted cashews – roughly chopped
- Pan fried prawns or left-over roast chicken pieces (optional)
- Asian Ginger Sesame Miso Dressing (see below)
Preparation:
- Combine the romaine lettuce, carrot, celery, spring onion and cilantro in a large bowl. Pour over the dressing and toss to combine.
- Top with the chicken or prawn, sesame seeds and roasted cashews
Dressing
Ingredients:
- 1/3 cup rice vinegar
- ¼ cup olive oil
- 2 tbsp sesame oil
- 1 tbsp honey
- 1 tbsp tamari (gluten free soy sauce)
- 1 tbsp sesame seeds
- 1” piece ginger
- 2 garlic cloves
- 1 tbsp light miso (if you can’t find miso, just add a bit extra tamari or salt to taste)
Preparation:
- Place all the ingredients in a food processor
- Blend until the dressing is creamy
- Use immediately or store in the refrigerator
