Asian Salad with Ginger Sesame Miso Dressing

Ingredients:
  • Romaine Lettuce – chopped
  • Carrot – julienned
  • Celery – cut into thin slices
  • Spring onion – finely chopped
  • Cilantro – roughly chopped
  • Toasted sesame seeds
  • Roasted cashews – roughly chopped
  • Pan fried prawns or left-over roast chicken pieces (optional)
  • Asian Ginger Sesame Miso Dressing (see below)
Preparation:
  • Combine the romaine lettuce, carrot, celery, spring onion and cilantro in a large bowl. Pour over the dressing and toss to combine.
  • Top with the chicken or prawn, sesame seeds and roasted cashews

 

Dressing

Ingredients:
  • 1/3 cup rice vinegar
  • ¼ cup olive oil
  • 2 tbsp sesame oil
  • 1 tbsp honey
  • 1 tbsp tamari (gluten free soy sauce)
  • 1 tbsp sesame seeds
  • 1” piece ginger
  • 2 garlic cloves
  • 1 tbsp light miso (if you can’t find miso, just add a bit extra tamari or salt to taste)
Preparation:
  • Place all the ingredients in a food processor
  • Blend until the dressing is creamy
  • Use immediately or store in the refrigerator
