Banana Oat Pancakes

Deliciously healthy pancakes. Makes for happy kids and a happy mom! These soft and sweet pancakes are easy to make with just a few wholesome ingredients, no sugar and they are seriously good. With a bit of maple syrup but even without. Use certified gluten free oats if you have an issue with gluten.

Ingredients:

(serves 4)

  • 150 g whole rolled oats
  • 2 bananas
  • 1 egg
  • 1 cup milk (regular or any other milk of your choice)
  • 1 tsp baking powder
  • 1/2 tsp vanilla bean powder
  • pinch of sea salt

Preparation:

  • Place the oats in a food processor and blend into flour
  • Add the bananas and continue to blend until smooth
  • Remove into a medium size bowl
  • Beat in the egg
  • Continue stirring while you add the milk until you have pancake batter consistency
  • Add in the baking powder, vanilla bean powder and a pinch of salt and mix well
  • Heat a large skillet and add a tsp of ghee
  • Drop a ladle full of batter into the pan and allow to spread out on its own
  • Repeat until you have 3 pancakes going in the skillet
  • Brown on low to medium flame for about 3-4 minutes
  • Turn and brown on the other side for another 3 minutes
  • Serve with pure maple syrup
