Bliss bombs are little sweet treats made with healthy whole foods, in this case nuts, seeds, dates and coconut. Add a little lemon and vanilla and you have pure bliss!
Ingredients
(makes around 15)
- 1 cup dried dates, soaked in warm water until soft
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp vanilla essence
- 1/4 cup almonds, blanched and toasted (10 min. @ 175 degrees Celsius)
- 2 tbsp sunflower seeds
- 2 tbsp sesame seeds
- pinch of sea salt
- 1/2 cup desiccated coconut
- (additional 1/2 cup desiccated coconut for rolling)
Preparation
- Drain the dates and place in a food processor along with the rest of the ingredients
- Process until combined
- Roll into walnut size balls and coat with the desiccated coconut
- Chill in the fridge
- Enjoy!
