Bliss Bombs

Bliss bombs are little sweet treats made with healthy whole foods, in this case nuts, seeds, dates and coconut. Add a little lemon and vanilla and you have pure bliss!

Ingredients

(makes around 15)

  • 1 cup dried dates, soaked in warm water until soft
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp vanilla essence
  • 1/4 cup almonds, blanched and toasted (10 min. @ 175 degrees Celsius)
  • 2 tbsp sunflower seeds
  • 2 tbsp sesame seeds
  • pinch of sea salt
  • 1/2 cup desiccated coconut
  • (additional 1/2 cup desiccated coconut for rolling)

Preparation

  • Drain the dates and place in a food processor along with the rest of the ingredients
  • Process until combined
  • Roll into walnut size balls and coat with the desiccated coconut
  • Chill in the fridge
  • Enjoy!
