Chickpea Salad

Chickpeas are an excellent source of fiber and protein and when mixed with plenty of healthy vegetables, dressing and some feta cheese it makes a complete and tasty meal for lunch, a light dinner or even as a side salad.

(serves 1)

Ingredients:

  • ½ cup diced zucchini
  • ½ cup diced yellow squash
  • ½ cup diced yellow or red capsicum
  • ½ cup halved cherry tomatoes
  • 2/3 cup cooked or canned chickpeas (when using canned, run some hot water over the drained chickpeas to “revive” the taste)
  • 8 halved black olives
  • 2 tbsp chopped parsley
  • ¼ cup crumbled feta cheese

Dressing:

  • 1 tbsp extra virgin olive oil
  • 1 tsp lemon juice
  • 1/8 tsp sea salt
  • black pepper to taste

Preparation:

  • Place the diced zucchini and squash in a small saucepan with a few tablespoons of water and bring to a boil
  • Cover and let it steam for a few minutes
  • Drain the excess water and place in a salad bowl along with all the other ingredients
  • Pour over the dressing and toss everything together
  • Serve at room temperature
