Chocolate Banana Ice Cream

Chocolate Banana Ice CreamA healthy ice cream, how about that?! And it is delicious too. You should see my son eating this. If he had the chance he would lick the bowl clean. I guess he does when I am not looking… There is no dairy involved, no sugar, just a few healthy ingredients and a blender. Give it a go and be prepared to never look back..

Serves 2

Ingredients:

  • 2 bananas, cut into slices and frozen (it will be easier if you freeze the slices in one layer. Some people like to freeze them on a tray, I put them in a zip-lock bag. spread them out and lay it down flat in the freezer)
  • 1 tbsp coconut cream (chill a can of coconut milk in the refrigerator so that the liquid separates from the cream)
  • 1 tbsp almond butter *
  • 1 heaped tbsp unsweetened cacao powder
  • Some chopped nuts to serve (optional)

Preparation:

  • Place all the ingredients in a high powered blender (or food processor) and blend until smooth
  • Divide over two bowls and enjoy!

* To make your own almond butter:

Heat the oven to 175 degrees Celsius. Spread out 1 cup of raw almonds on a baking sheet and place in the oven. Roast for about 10 minutes. Remove from the oven and allow to cool completely. Place the roasted almonds in a food processor with a pinch of salt and process until you have smooth and creamy almond butter.
