(gluten free and sugar free goodness)
Best had freshly baked and warm!
Ingredients:
- 1 banana
- 2 large eggs, lightly beaten
- 1 tbsp coconut oil
- 1 tbsp water
- 1 tbsp maple syrup
- ½ tsp vanilla extract
- 1 cup almond meal
- ½ tsp cinnamon
- ¼ tsp baking soda
- 1 tbsp chia seeds
- ¼ cup chopped dark chocolate
Preparation:
- Preheat oven to 175 degrees Celsius
- Line a muffin tray
- Mash the banana in the bottom of a bowl
- Add the eggs, coconut oil, water, maple syrup and vanilla extract
- In a separate bowl, combine the almond flour with the chia seeds, baking soda and cinnamon powder
- Add the banana – egg mixture to the dry ingredients and combine well
- Stir in the chopped dark chocolate
- Spoon the batter into the muffin cups, filling them only ¾
- Bake for around 20 minutes or until a toothpick inserted comes out clean
