Chocolate Chip Almond Muffins

(gluten free and sugar free goodness)

Best had freshly baked and warm!

Ingredients:

  • 1 banana
  • 2 large eggs, lightly beaten
  • 1 tbsp coconut oil
  • 1 tbsp water
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract
  • 1 cup almond meal
  • ½ tsp cinnamon
  • ¼ tsp baking soda
  • 1 tbsp chia seeds
  • ¼ cup chopped dark chocolate

Preparation:

  • Preheat oven to 175 degrees Celsius
  • Line a muffin tray
  • Mash the banana in the bottom of a bowl
  • Add the eggs, coconut oil, water, maple syrup and vanilla extract
  • In a separate bowl, combine the almond flour with the chia seeds, baking soda and cinnamon powder
  • Add the banana – egg mixture to the dry ingredients  and combine well
  • Stir in the chopped dark chocolate
  • Spoon the batter into the muffin cups, filling them only ¾
  • Bake for around 20 minutes or until a toothpick inserted comes out clean
