A crunchy nut-based crust filled with a creamy chocolate ganache. No baking required, no dairy and no sugar involved. How is that for a guilt-free treat!
(gluten free, dairy free)
(makes 6)
Crust:
Ingredients:
- 1/2 cup roasted almonds (unsalted)
- ½ cup walnuts
- 2 tbsp desiccated coconut
- 6 dates, chopped
- 1/2 tsp coconut oil
- 1/8 tsp salt
- 1/8 tsp cinnamon
Preparation:
- Line a muffin tray with 6 muffin papers
- In a food processor, pulse the nuts until ground into a coarse meal
- Add the other ingredients and pulse until it has turned into a sticky mixture
- Spoon the mixture into the muffin papers, dividing equally and pressing it down firmly
- Take a round glass object which is slightly smaller in circumference than the bottom of the muffin rounds (I used a glass spice bottle) and press into down into the center of the mixture. This will create a cup form with raised edges.
Filling:
Ingredients:
- 6 dates (soaked in warm water for 1 hour and drained)
- 1 large, ripe avocado
- 1 heaped tbsp unsweetened cacao powder
- ¼ tsp cinnamon powder
- 1 tsp maple syrup
- ½ tsp coconut oil
- Pinch of salt
Preparation:
- Place all ingredients in a food processor and blend until smooth
- Spoon into the crusts
- Cover and allow to chill in the freezer for one hour before serving
- Top with shaved dark chocolate
