Who doesn’t enjoy a piece of something sweet every now and then? With a cup of coffee or tea or after a meal? I know I do and to satisfy that occasional craving I keep bars like these around. Inspired by Larabar and Raw Bite bars, they are made with only a few all-natural ingredients like dried fruit and nuts and perhaps a spice for flavor. This is one of my favorites: with coconut and dates, almonds and cashews. Believe me: a small piece does the trick and unlike most of the so-called “health” bars you find on the shelves, they are actually healthy!
Ingredients:
- 1/3 cup blanched almonds, roughly chopped
- 1/4 cup raw cashews, roughly chopped
- 1/2 cup dessiccated coconut
- 1 cup dates, roughly chopped
- 1 tsp coconut oil
Preparation:
- Place all the ingredients in a food processor and pulse until well combined, scraping down the sides
- Remove and form a large ball with the mixture
- Place on a baking sheet, cover with some cling film and use a rolling pin to roll into a 1/2 inch thick square
- Refrigerate for about 1 hour and cut into equal size bars
- Store in the refrigerator
