I like to start my day with a portion of seasonal fruit before I eat my breakfast. Easy to digest, full of beneficial, liver loving enzymes, vitamins and minerals and healthy fiber. Papaya with a squeeze of lime is a current summer favorite as is melon. And sometimes, instead of cut fruit I throw a combo in the Vitamix blender and drink it up instead. Ingredients:
- 1 cup chopped cucumber (preferably with the skin – choose organic!)
- 1 1/1 cup chopped honeydew melon
- a small handful of mint leaves
- tsp of lime juice
Preparation
- Place the ingredients in a blender and blend until smooth
