These little babies are a perfect little treat! Especially when freshly baked and still warm from the oven… Gluten free, protein-rich and without sugar.
Ingredients:
- 1 cup almond flour
- 2 tbsp coconut flour
- 1/4 cup unsweetened cacao powder
- 1/2 tsp baking soda
- pinch of salt
- 4 eggs
- 4 tbsp coconut oil
- 4 tbsp maple syrup
- 1 tsp vanilla essence
- 1/4 cup dark chocolate chips (I like to chop up a dark chocolate bar)
Preparation:
- Preheat the oven to 175 degrees Celsius and line two mini muffin trays
- Combine the almond flour, coconut flour, cacao powder, baking soda and salt in a large bowl
- In a separate bowl combine the eggs, coconut oil, maple syrup and vanilla essence
- Add the liquid mixture into the dry mixture and mix well
- Stir in the dark chocolate chips
- Scoop the batter into the muffin cups, filling them up to 3/4rd
- Bake in the oven for 20 – 25 minutes or until a toothpick inserted comes out clean
- Cool on a wire rack
