Dark Chocolate Mini Muffins (Paleo approved)

These little babies are a perfect little treat! Especially when freshly baked and still warm from the oven… Gluten free, protein-rich and without sugar.

Ingredients:

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1/4 cup unsweetened cacao powder
  • 1/2 tsp baking soda
  • pinch of salt
  • 4 eggs
  • 4 tbsp coconut oil
  • 4 tbsp maple syrup
  • 1 tsp vanilla essence
  • 1/4 cup dark chocolate chips (I like to chop up a dark chocolate bar)

Preparation:

  • Preheat the oven to 175 degrees Celsius and line two mini muffin trays
  • Combine the almond flour, coconut flour, cacao powder, baking soda and salt in a large bowl
  • In a separate bowl combine the eggs, coconut oil, maple syrup and vanilla essence
  • Add the liquid mixture into the dry mixture and mix well
  • Stir in the dark chocolate chips
  • Scoop the batter into the muffin cups, filling them up to 3/4rd
  • Bake in the oven for 20 – 25 minutes or until a toothpick inserted comes out clean
  • Cool on a wire rack
