Fruity Breakfast Salad

Sometimes a fresh salad with crisp green leaves, juicy fruits, crunchy nuts, and a creamy sweet dressing is a perfect way to start the day. Light, energising and refreshing!

Ingredients:

(serves 1)

  • Arugula, 2 cups
  • Mandarin, 1- peeled and separated
  • Pomegranate seeds, 1/4 cup
  • Mint, few leaves – chopped
  • Pecans, 6 – toasted
  • Fennel, 1/2 cup – thinly sliced
  • Tahini dressing *, 2 tbsp

Tahini dressing:

  • Tahini, 4 tbsp
  • Honey, 1 tbsp
  • Orange juice, 2 tbsp
  • Lemon juice, 1 tbsp
  • Water, 2 tbsp
  • Cinnamon powder, 1/4 tsp
  • Ginger powder, pinch
  • Salt, to taste
Preparation:
  • Layer the ingredients into a bowl
  • Drizzle over the dressing
  • Enjoy!
