Sometimes a fresh salad with crisp green leaves, juicy fruits, crunchy nuts, and a creamy sweet dressing is a perfect way to start the day. Light, energising and refreshing!
Ingredients:
(serves 1)
- Arugula, 2 cups
- Mandarin, 1- peeled and separated
- Pomegranate seeds, 1/4 cup
- Mint, few leaves – chopped
- Pecans, 6 – toasted
- Fennel, 1/2 cup – thinly sliced
- Tahini dressing *, 2 tbsp
Tahini dressing:
- Tahini, 4 tbsp
- Honey, 1 tbsp
- Orange juice, 2 tbsp
- Lemon juice, 1 tbsp
- Water, 2 tbsp
- Cinnamon powder, 1/4 tsp
- Ginger powder, pinch
- Salt, to taste
Preparation:
- Layer the ingredients into a bowl
- Drizzle over the dressing
- Enjoy!
