In Traditional Chinese Medicine there is an old saying, “Eat more radish in winter and ginger in summer, you will not need doctor’s prescriptions.” With temperatures soaring in Delhi I have therefore appointed this my beverage of choice. The ginger provides a nice kick and the mint is oh so refreshing. And who doesn’t love a drink with a bit of fizz..
(serves 1)
Ingredients:
- 2 tbsp ginger juice *
- 1 tsp honey
- 10 mint leaves
- Sparkling mineral water or soda
- Squeeze of lemon
- 3 ice cubes and a lemon wedge to serve
Preparation:
- Place the ginger juice, honey and mint leaves in a glass and press down on the leaves while gently twisting with a muddler until you can smell the delicious mint fragrance
- Top with sparkling mineral water and a squeeze of lime or lemon
- Add a few cubes of ice and serve with a lemon wedge
* Ginger Juice:
- 1/2 cup of grated ginger
- 1 cup of water
- Bring to a boil in a small saucepan and let it simmer for 20 minutes
- Turn of the heat and let it cool down
- Strain through a fine mesh sieve, making sure to squeeze out all the juice
- Refrigerate
