So simple to make and so delicious.. Coconut goodness at its best. I have adapted a basic recipe for coconut butter by Melissa Joulwan, author of “Well Fed”. It takes a good food processor and a little patience but it is well worth it!
Ingredients:
- 100 g. desiccated coconut
- Pinch of sea salt
- 1 tsp coconut oil
- ¼ tsp vanilla
- 1 tsp unsweetened cacao powder
- 1 tsp maple syrup
Preparation:
- Place the desiccated coconut, salt, coconut oil and vanilla in a food processor and process for about 10 minutes. In between, stop a few times to scrape down the sides of the processor. After about 10 minutes you should have a smooth, buttery consistency. This coconut butter is already perfect on its own but for extra oomph continue:
- Add the cacao powder and maple syrup and process for another few minutes.
- Pour into a low square container (or even a small glass bowl) and refrigerate for a few hours till hardened
- Place the container in a larger bowl with some warm water until the coconut fudge can be easily removed.
- Cut into chunks and store in the fridge.
Note: you will find that the coconut reduces in volume quite a bit so feel free to multiply the ingredients to your liking.
