Homemade Energy Bars

Oh you’re so going to love these bars! They are a sweet treat that is super delicious and easy to make with nutrient dense nuts and seeds. And it’s the creamy tahini which takes them totally over the top. Yum.

Nuts and seeds are loaded with mineral goodness. Zinc, magnesium, phosphorus, manganese, copper, iron, selenium, folate, molybdenum, calcium, Vitamins E, B1, B6, it’s all in there. And don’t forget the fiber and protein!

So make a batch, store them in the fridge for when you need a quick boost or a healthy treat.

Ingredients:

  • 1/2 cup roasted almonds, roughly chopped
  • 1/4 cup pecans, roughly chopped
  • 1/3 cup pumpkin seeds
  • 1/3 cup sunflower seeds
  • 1 tbsp chia seeds
  • 1/3 cup golden raisins
  • 1/4 tsp himalayan pink salt
  • 2 tbsp honey
  • 1 tbsp maple syrup
  • 1/4 cup tahini (unsalted)
  • 1 tsp coconut oil
  • 1/2 tsp pure vanila essence

Preparation

  • Preheat the oven to 350°F / 175°C. Spread the pecans, pumpkin seeds and sunflower seeds on a lined baking sheet and roast for 10 minutes, stirring once in between. Allow to cool
  • In a small saucepan combine the tahini, maple syrup, coconut oil, vanilla essence and honey. Heat only a little, until you can easily whisk together the ingredients
  • In a bowl combine the nuts, seeds, raisins and salt
  • Pour the liquid ingredients on top and stir to combine
  • Spread the mixture into an 8×8 baking dish which is lined with baking paper.
  • Press it down firmly and refrigerate for a few hours until set
  • Remove from the baking dish and slice into squares or bars
  • You can wrap these individually with parchment paper and keep refrigerated for up to two weeks
