Iced Mango Mint Tea

A fruity, mint-infused iced tea. Deliciously refreshing and perfect for a hot summer afternoon.

To prepare the mint tea:

Ingredients:

  • 1 cup of fresh mint leaves (loosely packed)
  • 2 tbsp. white tea leaves
  • 1 liter water
  • 2 tsp honey (or to taste)

Preparation:

  • In a pot, bring the water to boil.
  • Add the mint leaves and allow to simmer for a few minutes.
  • Turn of the heat and add the tea leaves
  • Cover and let the contents steep for 5 minutes.
  • Strain through a sieve into a glass jar and stir in honey.
  • Let the tea cool down and refrigerate until ready to serve.

To prepare the Iced Mango Mint Tea:

Ingredients:

  • flesh of 1 mango, pureed
  • 1 liter of cold mint tea
  • 1 tbsp lemon juice

Preparation:

  • Put all the ingredients in a high speed blender
  • Blend until smooth
  • Pour into glasses over ice and garnish with a lemon wedge and some mint leaves
