Indian Spiced Quinoa Porridge

Indian Spiced Quinoa Porridge with Coconut Milk and Dried Fruit

(serves 4)

Spiced with cinnamon, cardamom and ginger, this delicious breakfast will not only satisfy your taste buds but will also give you a steady flow of energy through the day.

Quinoa is a grain-like seed from South America , well-know for its amazing health benefits. It is a complete protein, containing all nine essential amino acids, and it is rich in fiber, iron, lysine and magnesium among other things.

Ingredients:

  • 1 cup quinoa
  • 1 cup water
  • 1 cup coconut milk plus extra for serving
  • 1 tbsp jaggery (goor)
  • ¼ tsp salt
  • Slice of fresh ginger
  • 5 pods of green cardamom
  • ½ tsp cinnamon
  • ¼ cup raisins
  • ¼ cup dried apricots, chopped
  • Chopped almonds (soaked overnight and peeled)
  • Seasonal fresh fruit (pomegranate, apple, banana etc.)

Preparation:

Thoroughly rinse the quinoa in a strainer with clean water.

Place the quinoa in a sauce pan with the water, coconut milk, jaggery, salt, ginger, cardamom, cinnamon, raisins and dried apricots.

Bring the mixture to a boil, cover, reduce the heat and let it simmer for 15 minutes.

After 15 minutes, turn of the heat and let it stand, covered, for another 5 minutes before fluffing the quinoa with a fork.

Remove the ginger and cardamom pods and spoon the quinoa into individual bowls.

Top each serving with 1 tbsp. of coconut milk, some chopped almonds, a sprinkle of cinnamon and some seasonal fresh fruit of your choice.

Serve hot!
