Mexican Chopped Salad with Creamy Cilantro Dressing

I just simply love it when my plate looks this colorful. I know I am flooding my system with nutrients and health promoting phytochemicals. And if it is also easy to prepare and tastes great I know I have a winner!

I used home-made avocado oil mayo for the dressing and not only is it yummy, it is “clean” and made with only a few wholesome ingredients, unlike most of the store-bought mayos. You can find the recipe here: home-made mayo.

Ingredients:

Dressing:

  • 1 clove garlic, minced
  • 1/2 cup packed cilantro
  • 1/2 cup home made mayonnaise
  • 2 tsbp coconut milk (full fat)
  • 1 tsp lemon juice
  • 1/8 tsp sea salt
  • 1/8 tsp cumin powder
  • 1/8 tsp chipotle powder (or cayenne)

Salad:

  • Romaine lettuce, chopped
  • Black beans *
  • Orange / Yellow Bell peppers, diced
  • Avocado, diced
  • Red cabbage, thinly sliced
  • Sweet potato, boiled, peeled and cubed
  • Fresh tomato salsa:
    • 2 tomatoes, deseeded and finely chopped
    • 1 red onion, finely chopped
    • 1 tbsp finely chopped coriander
    • lemon juice
    • salt

* you can substitute grilled chicken, or seasoned cooked ground meat for the beans to keep it Paleo.

Preparation:

  • Place the ingredients for the dressing in a bowl and mix well
  • Layer the ingredients for the salad on a plate
  • Drizzle the dressing on top
