Not So Plain Vanilla Granola

An easy recipe for delicious home-made granola with the goodness of whole rolled oats, walnuts & seeds and the delightful flavor of vanilla. Top it with milk of your choice, use it to make Granola, Fruit & Yoghurt Bowls, Berry Banana Breakfast Bowls or just eat it by the spoonful for a snack.

Ingredients:

  • 2 cups rolled oats
  • ¼ cup dried shredded coconut
  • ½ cup walnuts, roughly chopped
  • 2 tbsp sunflower seeds
  • 1 tbsp sesame seeds
  • ½ tsp vanilla powder (or 2 tsp vanilla essence)
  • ¼ tsp sea salt
  • 1/8 cup coconut oil (warmed until liquid)
  • 1/8 cup maple syrup

Preparation:

  • Preheat the oven to 125 degrees Celsius
  • In a bowl, mix the dry ingredients
  • In a separate bowl, mix the coconut the maple syrup (and vanilla essence if you are using that instead of the vanilla powder)
  • Pour the coconut oil mixture over the dry ingredients and mix well until everything is coated
  • Spread out the mixture on a baking sheet and bake in the oven for 30 minutes, stirring it every 10 minutes
  • Allow to cool and store in an airtight container
