Paleo Coconut Porridge
This nutritious and refreshing breakfast has been a favorite of mine for a long time. It is originally from the Café Gratitude cookbook and one version is already on the Flavor of Health website.  You do need to be lucky enough to have access to whole tender coconuts with the coconut “meat”. If you are that lucky, please try this and be hooked!

Ingredients:

  • A tender coconut: both water and coconut “meat” (in India they call it “mota malai” or thick cream)
  • Pinch of salt
  • ¼ tsp cinnamon powder
  • ¼ tsp vanilla essence
  • ½ green apple, chopped
  • ½ kiwi fruit, diced
  • handful of pecan nuts (or any other nuts of your choice)
  • ½ cup pomegranate seeds (or ½ cup fresh berries (like strawberries, raspberries, blueberries)

Preparation:

  • Place the coconut meat and ½ cup of coconut water in a blender and blend until smooth
  • Add a pinch of salt, cinnamon powder, vanilla essence and fruit (except pomegranate) and pulse until the mixture has a porridge-like consistency.
