Paleo Porridge

A warm bowl of oatmeal porridge was my favorite breakfast before I embarked on a Paleo way of eating recently. Eggs are great but a warm, sweet, cinnamonny bowl of creamy porridge topped with some fruit continues to be a favorite. So I was quick to find a Paleo-friendly version. Let me tell you: it might even be better than the the original… Heavenly!

Ingredients:

(serves 1)

  • 1/8 cup almond meal
  • 1 tbsp ground flax seeds
  • 1/2 tsp cinnamon powder
  • 1/4 – 1/2 cup coconut milk (depending on how thick you like the porridge)
  • 1 mashed banana

Preparation:

  • Place all the ingredients in a small sauce pan and stir and heat until it bubbles and starts thickening.
  • Transfer to a bowl and top with fruit of your choice, like pomegranate and green apple or kiwi.
  • Enjoy!
