Prawn & Pomelo Salad

Prawn & Pomelo SaladA refreshing and flavourful salad that is so easy to make and so delicious.

 

Ingredients:

Dressing:

  • 3 tbsp lemon juice
  • 2 tbsp finely chopped red onion
  • 1 1/2 tsp coconut sugar
  • 3 tsp Thai fish sauce
  • 2 garlic cloves, minced
  • 1/2 – 1 finely chopped red chili (some like it hot!)
  • 2 tbsp chopped spring onion
  • 2 tbsp chopped fresh coriander leaves

Salad:

  • 2 cups pomelo flesh, broken up into bite-size pieces
  • 300 g medium size prawns
  • 1/2 cup roasted cashews, roughly chopped

 

Preparation:
  • Place the dressing ingredients in a small bowl and whisk together
  • Heat a frying pan without oil and when hot, toss in the prawns and stir fry until cooked through (no oil used)
  • Remove from the pan and allow to cool
  • Place the pomelo in a large bowl and pour over the dressing
  • Add the prawns and stir to combine
  • Cover and allow to marinate in the fridge for a few hours
  • Before serving, top with the chopped cashews and some more chopped spring onion and coriander
