Red Rice Salad with Roasted Cumin Yoghurt Dressing
(serves 2) (gluten-free)
A refreshing and filling salad with nutritious whole grain rice, crunchy cucumbers and capsicum and a delicious cumin infused yoghurt dressing.
Ingredients:
- Few handfuls of mixed lettuce
- 1 cup cooked unpolished red rice (you can substitute this with cooked brown rice)
- 1 small red capsicum, chopped
- 1 cucumber, chopped
- 2 spring onions, sliced
- ½ red onion, thinly sliced
- 2 tbsp toasted pine nuts
Dressing:
- 4 tbsp yoghurt
- 2 tbsp cold pressed, extra virgin olive oil
- 1 tbsp lemon juice
- Salt to taste
- ¼ tsp roasted cumin powder *
Preparation:
- Mix the rice with the chopped cucumber, capsicum, spring onion, red onion and 2 tbsp of the dressing
- Arrange the mixed lettuce on 2 plates and drizzle 1 tbsp of dressing over each plate
- Place the rice mixture on top of the lettuce
- Sprinkle the pine nuts and remaining dressing over the salad
Note:
For some added protein, try topping the salad with slices of pan-fried chicken breast.

* Dry roast cumin seeds in a non-stick frying pan until fragrant. Grind into a powder with a mortar and pestle.
