Red Rice Salad with Roasted Cumin Yoghurt Dressing

Red Rice Salad with Roasted Cumin Yoghurt Dressing

(serves 2) (gluten-free)

A refreshing and filling salad with nutritious whole grain rice, crunchy cucumbers and capsicum and a delicious cumin infused yoghurt dressing.

Ingredients:

  • Few handfuls of mixed lettuce
  • 1 cup cooked unpolished red rice (you can substitute this with cooked brown rice)
  • 1 small red capsicum, chopped
  • 1 cucumber, chopped
  • 2 spring onions, sliced
  • ½ red onion, thinly sliced
  • 2 tbsp toasted pine nuts

Dressing:

  • 4 tbsp yoghurt
  • 2 tbsp cold pressed, extra virgin olive oil
  • 1 tbsp lemon juice
  • Salt to taste
  • ¼ tsp roasted cumin powder *

Preparation:

  1. Mix the rice with the chopped cucumber, capsicum, spring onion, red onion and 2 tbsp of the dressing
  2. Arrange the mixed lettuce on 2 plates and drizzle 1 tbsp of dressing over each plate
  3. Place the rice mixture on top of the lettuce
  4. Sprinkle the pine nuts and remaining dressing over the salad

Note:

For some added protein, try topping the salad with slices of pan-fried chicken breast.

* Dry roast cumin seeds in a non-stick frying pan until fragrant. Grind into a powder with a mortar and pestle.
