A quick, easy and healthy dinner option. Don’t have salmon? Try it with prawns or chicken. Serve with brown rice and a crisp cucumber salad. Yum!
(serves 4)
Ingredients:
- 500 g salmon filet, cut into slices
- 2 small red onions, sliced
- 1 small red capsicum, sliced
- 1 small yellow capsicum, sliced
- 4 cups of broccoli florets
- 2 garlic cloves, minced
- 3 tbsp minced ginger
- 3 tbsp soy sauce (I like to use tamari)
- 1 tbsp lemon juice
- 2 tbsp grated lemon rind
To garnish:
- toasted sesame seeds
- Sliced spring onion
- Chopped coriander leaves
Preparation:
- Boil the broccoli florets for 4 minutes, then drain
- Stir fry the salmon in 1 tbsp of ghee with the lemon rind until cooked through
- Season with salt and black pepper and remove with a slotted spoon
- Add 1 more tbsp of ghee and stir-fry the onion, garlic, capsicum and ginger for 4 minutes
- Add the broccoli and stir fry for another 2 minutes
- Add the soy sauce, lemon juice and salmon and toss gently till heated through
- Garnish with the sesame seeds, spring onion and coriander and serve with brown rice and a cucumber salad
