If you are a regular follower of my blog recipes, you know I love my chipotle peppers! We cook with fresh ingredients at home most of the time, but I do make an exception for chipotle peppers in adobe sauce. Can’t find them in Manila but we brought back a couple of cans from NYC this summer! Spicy and smoky, these add flavour to many Mexican inspired dishes, including these wraps. (tip: try using some dried chipotle powder instead if you can’t find them where you live).
The recipe for these wraps is from Danielle Walker’s Against All Grain. Do check out Danielle’s website and cookbooks, her story of putting Ulcerative Colitis (an autoimmune condition) into remission is inspiring and her Paleo friendly recipes are amazing.
Ingredients:
- wraps (recipe below)
- chopped romaine lettuce
- Chipotle Mayo (recipe below)
- 4 thin slices of smoked turkey breast
Preparation:
- Place a wrap on a plate
- Spread 1 tbsp of chipotle mayo on top
- Top with romaine lettuce and 2 slices of the smoked turkey
- Roll up, cut in half and enjoy!
* Paleo Wraps Recipe:
(from Against all Grain)
Ingredients:
- 6 large eggs, beaten
- 1 cup almond milk
- 6 tbsp coconut flour, sifted
- ½ cup arrowroot power (or tapioca powder)
- 2 tbsp melted ghee
- ½ tsp sea salt
- ghee for the pan
Preparation:
- Heat an 8 inch frying pan to medium-high heat
- Whisk together the eggs, almond milk, coconut flour, arrowroot powder, ghee and salt.
- Let the batter sit for 10 minutes, then whisk again
- Melt a small amount of ghee in the pan and spread it all over
- Ladle ¼ cup of the batter onto the hot pan and quickly spread it into a paper-thin 8-inch circle with the back of the ladle or by turning the pan quickly with your wrist. Fill in any holes with a drop of batter. Cook for 45 seconds, until the sides start to lift, then gently flip the wrap. Cook for 30 seconds on the other side.
- Move to a plate to cool and repeat the steps until all of the batter is used, greasing the pan between wraps when needed.
* Chipotle Mayo:
Ingredients:
- 1/2 cup home made mayo
- 2 tbsp chopped coriander leaves
- 1 spring onion, chopped
- 1 chipotle chile in adobe sauce (include some of the sauce for extra flavour), finely chopped
- 1 tsp lemon juice
- salt to taste
Preparation:
- Place all the ingredients in a small bowl and mix well
