Lovely to have for breakfast or even lunch or dinner with a side salad. Filled with healthy veggies and topped with egg but it’s the bacon (what does not taste good with bacon??!) and the smoked paprika that takes the whole dish to a new level.
Ingredients:
- 3 thin slices of bacon, chopped
- 1/4 cup finely chopped onion
- 1/4 cup finely diced carrots
- 1/4 cup finely diced celery
- 1/4 cup finely chopped green asparagus
- 2 cloves garlic, finely chopped
- 1 cup grated sweet potato
- 1/4 tsp smoked paprika powder
- Freshly grated black pepper
Preparation:
- In a small frying pan, sautee the bacon until cooked
- Remove from the pan
- Add the onion to the bacon fat and fry until translucent
- Add the chopped carrot, celery, asparagus and garlic and fry for a few minutes
- Add the bacon back to the pan along with the smoked paprika powder
- Mix in the grated sweet potato
- Add a tablespoon of water, cover and allow to cook for 3 minutes on low fire
- After 3 minutes, stir and press the mixture down in the frying pan creating a dent in the middle
- Pour the egg into the dent, cover and allow to cook on low fire for another 4 minutes
- Sprinkle with freshly grated black pepper and enjoy!
