Summer Fruit Salad

This is such a simple yet delicious breakfast. It takes full advantage of the gorgeous, juicy, fresh fruits that are abundantly available right now. Think mangoes, lychees, cherries, berries, apples, bananas and any other fruit you love. Top it with some protein-rich nuts and seeds and a few chopped mint leaves and you have a perfect anti-oxidant rich, rainbow-colored morning meal.

Ingredients:

  • Any combination of seasonal summer fruits
  • A few fresh chopped mint leaves
  • Toppings of your choice:
    • Soaked almonds
    • Hemp seeds *
    • Sunflower seeds
    • Cacao nibs **
    • Cashew Cream ***
    • Any other nuts / seeds you like

Preparation:

  • Prepare you fruits by washing, peeling and / or pitting them and chopping into bite size pieces
  • Place into a bowl and toss with chopped mint leaves
  • Top with your nuts and seeds of choice

* Hemp Seeds are considered to be a “superseed” that has the most well rounded and balanced nutritional profile. They contain all 9 essential amino acids, essential fatty acids in a balanced ratio of omega 3 : 6, fiber, vitamin E and trace minerals.

** Cacao nibs are cacao beans that have been roasted, removed from their husks and broken into small pieces. They are considered to be a superfood which is very high in anti-oxidants, magnesium and other important nutrients.

*** Soak a cup of cashews in water in the fridge overnight. Place in a blender with 1/2 cup of water, 1 tsp of maple syrup, a pinch of salt, 1/4 tsp. of cinnamon powder, 1/4 tsp of pure vanilla essence. Blend until smooth.
