Sweet Potato Chocolate Brownies with Walnuts
(gluten free)
Made with wholesome and healthy ingredients, these brownies are a sumptuous and guilt-free treat. And children love them! Sweet potatoes are a nutritional powerhouse containing high amounts of fiber, vitamin B6 and potassium for heart health, beta carotene, vitamin C and E which are important anti-oxidants, and manganese which plays an important function in carbohydrate metabolism.
Ingredients:
- 2 medium sized sweet potatoes (about 300 g.)
- 1/4 cup pure maple syrup
- 3 eggs, beaten
- 1/4 tsp. pure vanilla essence
- 2 1/2 tbsp. ghee (clarified butter)
- 3 tbsp. sorghum flour (jowar)
- 3 tbsp. unsweetened cacao powder
- 1/4 tsp. baking soda
- 1/4 tsp. baking powder
- 1/4 tsp. cinnamon powder
- pinch of salt
- 1/2 cup chocolate chips (I like using chopped-up pieces of a 70% dark chocolate bar)
- 1/2 cup chopped, toasted walnuts
Preparation:
- Heat the oven to 200 degrees Celsius. Poke the sweet potatoes a few times with a fork and bake till done for 35 – 40 minutes.
- Allow to cool and peel the potatoes
- Turn the oven temperature to 175 degrees Celsius
- Lightly grease an 8×8 baking dish with some ghee
- Mash the sweet potatoes in a large bowl
- Add the maple syrup, eggs, ghee and vanilla essence and mix until you have a smooth mixture
- In a separate bowl, combine the sorghum flour, cacao powder, baking soda, baking powder, cinnamon and salt
- Add to the sweet potato mixture, mix everything well and then stir in the chocolate chips and walnuts
- Pour the entire mixture into the baking dish and bake in the oven for 30 minutes
- Allow to cool a bit.
