Paleo Trail Mix

Trail mix makes a super easy, healthy and satisfying snack. Nutrient dense nuts and seeds, some dried fruit for sweetness and dark chocolate chips if you want to totally take it over the top… The combination of flavors and textures is addictive! Store in the fridge for after a work-out, when your kids need a snack, or pack for a trip.

Ingredients:

  • 1/4 cup roasted almonds, cut in half lengthwise *
  • 1/2 cup toasted coconut flakes **
  • 1/4 cup raisins
  • 1/4 cup raw pumpkin seeds
  • 1/8 cup pieces of a chopped up dark chocolate bar (I like my chocolate at 85% but anything over 75% would be ok – probably easier on the kids)

Preparation:

  • Combine all the ingredients in a bowl and toss
  • Transfer to a glass jar and store in the fridge

 

* Place raw almonds on a baking sheet in a 175 degree Celsius preheated oven for 8 – 10 minutes or until nice and toasted

** If dried coconut flakes are available in stores where you live, just bake them on a baking sheet in a single layer at 175 degree Celsius for about 5 minutes, checking often. They should be slightly brown around the edges

If you can’t find coconut flakes (like me), use a peeler to make thin slices out of the meat of a brown coconut. Place on a baking sheet and bake at 100 degrees Celsius for 1 hour and 15 minutes or until they are dry and slightly brown around the edges.
