A refreshing summer salad with a variety of flavors and textures. Surprisingly satisfying on its own for a light dinner. Think sunset out in the garden, listening to the sounds of summer, warm breeze blowing and a plate of this chilled salad… Perfection!
Ingredients:
(serves 2)
- 1 chilled watermelon, seeded and cut into bite size pieces or scooped into balls with a melon scoop
- 1 red onion, sliced
- 1/2 cup feta, crumbled
- 2 tbsp chopped mint leaves
- 2 tbsp toasted pumpkin seeds
Dressing:
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1/4 tsp salt
- 1/8 tsp black pepper
Preparation:
- Divide the watermelon over 2 large plates
- Top with the sliced onion
- Drizzle with the dressing
- Top with feta, pumpkin seeds and chopped mint
