Zucchini Hummus

It’s almost like the real deal. A slightly different consistency but still creamy, garlicky, tahini-y and I just love it. I eat it alongside grilled chicken, with raw veggie sticks, or drizzled on top of a salad. It’s so good. And healthy. And Paleo. What more do you want?

Ingredients:

  • 1 zucchini, chopped (cut off the ends but leave the skin on)
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 1/2 tsp salt
  • 1 tsp cumin powder
  • 2 cloves garlic
  • 1 tbsp extra virgin olive oil
  • dash of pepper

Preparation:

  • Place all the ingredients in a food processor
  • Blend until smooth
