Bircher Muesli

Most mornings I like to keep it simple and quick with breakfast. Which is why I always keep a batch of home made granola in my cupboard. I just add some fresh fruits, yoghurt or (almond) milk and voila! breakfast is served. An equally quick and delicious alternative is Bircher Muesli. Bircher Muesli was invented by a Swiss physician named Maximilian Bircher-Benner to help heal his patients. I got inspired to prepare this at home when we spent a few wonderful days at the Leela hotel in Goa two weeks ago where they had a big bowl of creamy Bircher Muesli on the breakfast buffet. Eating raw grains, nuts and seeds can be hard on the digestion but with Bircher Muesli they are soaked overnight and become easier to digest. The process of soaking grains, nuts and seeds helps to neutralize the phytic acid and enzyme inhibitors and is a must to ensure your body is able to absorb all the nutrients while keeping digestion strong and effective.

Ingredients:

To prepare a batch of muesli:

  • 2 cups rolled oats
  • 1/4 cup desiccated coconut
  • 1/2 cup chopped nuts (I used almonds and hazelnuts)
  • 2 tbsp sunflower seeds
  • 2 tbsp pumpkin seeds
  • 1 tbsp sesame seeds
  • 1/2 tsp. vanilla powder
  • 1 tsp cinnamon powder

Preparation:

  • The night before you plan to eat this for breakfast, combine in a bowl:
    • 2/3 cup of the muesli
    • 1 cup of milk of your choice (I like using almond milk)
    • 1 tsp lemon juice or 2 tbsp yoghurt
    • 1 tbsp chia seeds
  • Mix well, cover and refrigerate overnight
  • To serve, add:
    • 1/2 tbsp honey (or to taste)
    • 1/2 cup yoghurt (or some more milk)
    • fresh fruit (for example: grated apple and some chopped banana)
  • Enjoy!
