I like breakfast. And I like it in a bowl. I like the creamy consistency of porridge mixed with sweet and sour crunchy fruits and the bite of nuts thrown in for extra nutrition. Unlike many people in the Paleo community I am not able to wolf down eggs for breakfast every day so when embarking on a Paleo journey I knew I had to quickly come up with alternatives to my favorite oat porridge.
Paleo porridge no. 1 is heavenly. Banana bread in a bowl, warm and nourishing, cinnamony and sweet. But, like I mentioned in my Paleo Tips and Tricks, the key is to rotate your food so that things stay fun and exciting.
So here is Paleo Porridge no. 2: cold and deliciously creamy, mildly sweet and a perfect base for any kind of superfood and fresh fruits.
Ingredients:
(serves 1)
- ½ cup almond milk
- ½ avocado
- ½ banana
- 1 tsp chia seeds
- 1/8 tsp vanilla powder
- Optional: Superfood powder of your choice (maca, acai, lucuma, etc.)
- 1 cup of fruit of your choice: green apple, pomegranate, fresh berries, kiwi, papaya etc.
- handful of soaked almonds or other nuts of your choice
Preparation:
- Place the almond milk, avocado, banana, chia seeds and vanilla powder in a blender and blend until smooth
- Add the fruit (except pomegranate if using because you don’t want those beautiful jewels to break) and almonds and pulse until the mixture has a porridge-like consistency
- Pour into a bowl, stir in the pomegranate seeds and enjoy!
