Most days when the boys come home from school, the first word that comes out of their mouth is “food!” or “hungry!”. Not hi, hello, whatsup, hey, how are you or any other pleasantries. No, the stomach is speaking and loudly too.
It can be a serious effort to put together something different every day which a. they like and b. is nutritious. Â Something I feel good about giving them. This one here is a golden oldie but works every time.
Ingredients:
- A cored green apple, sliced
- Almond butter
- Chopped roasted almonds
- Chopped coconut flakes *
- Chopped dark chocolate
- Raisins
Preparation:
- Spread the slices with a good helping of almond butter
- Top with either roasted almonds and raisins, chopped coconut flakes and a sprinkling of cinnamon powder, or chopped dark chocolate or all at the same time đŸ™‚
And watch them come back to being human…
* Coconut flakes: either buy from the store or take the meat of a fresh brown coconut and slice it with a vegetable peeler. Spread the slices on a baking tray and bake in a 100 degree Celsius preheated oven for about 1 hour and 15 minutes or until the slices are slightly brown at the edges. Store in the fridge so that they are extra crunchy.Â
