Green is the color of healing, of renewal and vitality. Green leafy vegetables have all these qualities and provide us with tremendous nutritional – and healing power. They are packed with fiber, folic acid, chlorophyll, minerals and vitamins and other important phytochemicals but despite all that, they are the food most missing in our modern diets.

In the spring and summer fresh leafy greens are abundantly available and this is the time to add plenty of fresh salads to your diet and enjoy their healing and cleansing power. In the winters cooked greens such as spinach, mustard greens, kale, chard etc. are a better option. I enjoy adding green leafy vegetables to my morning smoothie to make sure I get my greens in.
